Ingredients:
2 Tablespoon(s) vegetable oil
1 finely diced onion, yellow
3 Clove(s) finely diced garlic
1 Tablespoon(s) microplaned ginger root
1/2 Teaspoon(s) turmeric
1/2 Teaspoon(s) cinnamon
1/2 Teaspoon(s) coriander
1 1/2 Tablespoon(s) paprika
1 Teaspoon(s) salt
1/2 Teaspoon(s) cumin
14 1/2 Ounce(s) canned diced tomato
1 Cup(s) water
4 Chicken Thigh
1/2 Cup(s) finely chopped cilantro, fresh
1 thinly sliced lemon
2 Cup(s) cut in half green beans, canned
1/4 Cup(s) finely chopped mint, fresh
3 Tablespoon(s) lemon juice

Optional Ingredients:
1/4 Teaspoon(s) cayenne pepper Add to shopping list

Directions:
1. Saute onion, garlic, and ginger in oil until soft and slightly brown
2. add spices, salt, and saute a minute more
3. add chicken, tomatoes, water, cilantro, and sliced lemon
4. simmer with a lid for 30 minutes
5. add green beans, mint, and lemon juice.
6. Simmer a few more minutes until the green beans are done.

serve with rice
